Since 2005, we have been offering you a timeless cuisine that revisits, in a simple and approachable manner, all the great classics of the Comté culinary heritage.

A Family Inspiration

In this context there is also a more personal note... That of honouring family dishes that I saw prepared by my mother and grandmother during my childhood. Whether it's dried food, the recipe for which is my grandmother's, or traditional dishes that I like to serve in a casserole dish. Casserole that reminds me of my mother's, simmering every Sunday at a low heat....

There is a saying that you can't know where you're going if you don't know where you come from. I think it's true... even when you're cooking. This past brings meaning to the present, as a common thread that is passed down from generation to generation.

So I draw my inspiration from this family history rich in flavours and memories. Each dish is prepared with the heart and a story of its own. The menu varies slowly according to the seasons, but the great classics such as the Bonneveau trout remain...

For 2 years now, our restaurant has been awarded a Michelin Guide plate.
